St. Paddy’s Chocolate Chunk Cookies🍀🍪

These buttery, golden cookies are packed with LePaon’s chocolate-covered pistachios, giving you the perfect balance of nutty crunch and rich chocolatey goodness. A touch of sea salt makes them utterly irresistible!

Ingredients (Makes about 12 cookies)

  • 1 ½ cups all-purpose flour

  • ½ teaspoon baking soda

  • ¼ teaspoon salt

  • ½ cup unsalted butter, softened

  • ½ cup brown sugar

  • ¼ cup granulated sugar

  • 1 egg

  • 1 teaspoon vanilla extract

  • 1 cup LePaon Chocolate-Covered Pistachios, roughly chopped

  • Flaky sea salt (optional, for garnish)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a bowl, whisk together flour, baking soda, and salt.

  3. In a separate bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.

  4. Beat in egg and vanilla extract until fully combined.

  5. Gradually mix in the dry ingredients until just combined.

  6. Fold in the chopped LePaon chocolate-covered pistachios.

  7. Scoop dough onto the prepared baking sheet, spacing cookies about 2 inches apart.

  8. Bake for 10-12 minutes, until edges are golden brown.

  9. Sprinkle with flaky sea salt while warm (optional) and let cool on the baking sheet for 5 minutes before transferring to a wire rack.
